Simply Stunning. Our Christmas Eve tradition was marvelous this year. Perfectly cooked prime rib with Au Jus.
This is one of my favorite meals of the year. We, for a family of four order 5 pounds. Keep in mind there is some waste from the fat and we then use the leftovers to make French Dip Sandwiches a few days later.
Place roast – (we used boneless) fat side up on a rack in open roasting pan.
Season with salt, pepper and some Lawry’s.
Insert meat thermometer into thickest part of roast, not touching bone or fat.
Do not add water, Do not cover.
Roast in oven at 300 to 325 degrees until meat thermometer registers 5 degrees below desired doneness. During the standing time, the roast will continue to cook and will reach the final temp reading.
Rare- 17-19 minutes per pound- internal temp 135-140
Medium Rare- 20-22 minutes per pound- internal temp 145-150
Medium- 23-25 minutes per pound- internal temp 155-160
Well Done – 27-30 minutes per pound- internal temp 165-170
Allow roast to stand tented with foil for 15-20 minutes before serving. Temp will rise and the roast will be easier to carve.
